Cookin up some Curry!

Geoff and I looooooove us some curry. Its so warm and comforting and perfect after a long week, you know? When G and I were first dating he would make me his "Chicken Curry in a Hurry" which I totally love. So I am always trying to find new twists on our old fave. I was tickled pink to find this version from Cooking Light. Its healthy, chock full of veggies and vitamins, and soooooooo good. I think I saw G licking his bowl. Curried Chicken Penne with Fresh Mango Chutney

Yield: 6 servings (serving size: about 1 1/3 cups)

Ingredients

  • CHUTNEY:
  • 2  cups  diced peeled ripe mango (about 2 mangoes)
  • 1  cup  finely chopped onion
  • 1/2  cup  water
  • 2  tablespoons  brown sugar
  • 1  tablespoon  curry powder
  • 1  tablespoon  fresh lime juice
  • 1/2  teaspoon  black pepper
  • 1/2  teaspoon  chopped peeled fresh ginger
  • 1/4  teaspoon  salt
  • CHICKEN:
  • 1  teaspoon  olive oil
  • 2  garlic cloves, minced
  • 1  pound  skinless, boneless chicken breasts, cut into 1-inch pieces
  • 1  cup  light coconut milk
  • 2  tablespoons  sugar
  • 1  teaspoon  salt
  • 1 1/2  teaspoons  red curry paste
  • 1  to 2 teaspoons Thai fish sauce
  • 2  cups  broccoli florets
  • 2  cups  cauliflower florets
  • 4  cups  hot cooked penne rigate (about 2 cups uncooked tube-shaped pasta)
  • 2  tablespoons  chopped green onions (optional)

Preparation
To prepare chutney, combine first 9 ingredients in a medium saucepan; bring to a boil. Reduce heat, and simmer 15 minutes or until most of liquid evaporates and mixture is thick, stirring occasionally.

To prepare chicken, heat oil in a large non-stick skillet over medium-high heat. Add garlic and chicken; sauté 5 minutes. Combine coconut milk and next 4 ingredients (coconut milk through fish sauce), stirring with a whisk. Add coconut mixture to pan; bring to a simmer. Add broccoli and cauliflower; cover and cook 7 minutes or until vegetables are crisp-tender, stirring occasionally. Stir in chutney and pasta; toss well to combine. Sprinkle with green onions, if desired.

If you like it then you shoulda put some paint on it...

Yes, I'm dorky. And yes I love Beyonce. Shoot me. Anyway, lame title aside, I think its the perfect way to introduce my newest DIY inspiration. I love hunting for vintage pieces and furniture that have great lines and structure, but happen to be coated with some sort of hideous varnish or ugly paint. Usually, you get them for a steal, and you get the joy of turning these little treasures into something you truly love. My newest blogger obsession does just that-and I am convinced she could turn a ball of rubber bands, old socks and some spray paint into something cool. Meet Michelle from Three Men & a Lady (thank you to Made by Girl for the introduction.) She really is a genius.

BTW, it is Michelle's fault that I am now obsessed with finding a ceramic owl to paint white.
How stinkin cute is this?! 

I love that she took thrift store candle sticks and plates and mixed and matched to make adorable cake plates. Wouldn't these be precious for a wedding dessert buffet?!

I love the bold yellow she chose for the dresser, and how she transformed a Wal-Mart Table into a gorgeous entryway table.

My fave project (besides the white owl) has to be the awesome sunburst mirror. She took an affordable find from Home Goods that was a little small and increased the circumference using skewers and some glue, then painted it silver to match her decor: brilliant!

Immortalizing our little monsters

Lots of my friends have started having babies. EEK!! I guess we are in that stage of life now, but I am so not prepared for parenthood (is anyone with me?!) Right now, I am content with our two fur babies, Calvin & Ellie Mae. They are totally our children. And its totally normal to take family photos with your pets right? Right. What about having them immortalized on canvas? Again, I think this is totally normal (and I think everyone else who is pet-obsessed would totally agree.)

Enter Ken Bailey. How cute are these paintings? I love the old fashioned appeal and clean lines, and the best part is that he will customize a painting with your pets image and name. This is a great (and modern) way to immortalize your little monsters in paint. Visit Ken's site for more cute samples and all the details...

Oh. My. God. I have been looking for this mirror since I saw it in Liz Lange's entryway (designed by Jonathan Adler) in Domino about a million years ago. Now if I only had $2,200 laying around....

Nothing Rhymes with Orange

And, according to Geoff, nothing goes with orange either. When we decided to live in sin, we each brought one bedside table to the mix. These bedside tables don't even come close to matching. Mine is painted black with a black & white striped top, and Geoff's is honey-colored wood. Lets just say neither goes with our chocolate leather upholstered headboard and blue-gray bedding. I love the eclectic look, and prefer things not to be too matchy-matchy, but these tables are so far out of left field that something must be done. So, I have been fantasizing about painting them both orange. Yes, orange. "Lauren, that's not very bedroom-y or soothing," you say...(and Geoff would agree) but I really think it might work. Besides, I've been dying to paint some piece of furniture in our bedroom orange since I saw this photo (below) of a room by amazing designer Ruthie Sommers. Awesome.

Her work was featured on the very first cover of (the now defunct) Domino Magazine (sob) and I've been obsessed with her work ever since. Perhaps when all the wedding madness blows over, I will tackle the beside tables. I'll let you know what happens. In the meantime, have a lovely Tuesday!
